One of my favorite cooking shows lately has to be Brunch at Bobby’s. Breakfast is my favorite meal and he makes everything look so delicious. He recently made this egg scramble with pasta and I knew I could easily replicate it by using veggie noodles instead. I also replaced the kale with spinach because it was what I already had on hand and left out the cheese due to dietary reasons. This recipe is a take on my favorite restaurant soup, the chicken and gnocchi soup from Olive Garden. Any time we would go there as a kid it was always my go to menu item. The never-ending winter that we seem to be having makes me want to curl up on the couch and enjoy something warm. This soup hits the spot. After searching on Pinterest I quickly came upon this recipe. I used the recipe as a guide rather than following it exactly. For me unless I’m baking I don’t feel the need to measure as I cook. Ok I admit, sometimes I just feel like I don’t have enough time to read. But thanks to Audible reading a book has never been easier. At first I was unsure how I felt about listening to a book, but now I love it. From getting ready in the morning to driving to work, it is so easy to listen to a book with Audible. Our biggest goal for the year as a family is to buy our first house. Although we are currently only browsing sites like Zillow, I am anxiously anticipating decorating our future home.
