S’mores Bites

I feel like lately every time we are flipping through the TV channels we stumble upon The Sandlot. Thanks to the “I haven’t had anything yet… so how can I have some more of nothing?” scene and my love of s’mores I came up with this mini version. I used this paleo marshmallow recipe, but store-bought marshmallows could also be used if you are not feeling adventurous. I must say it was surprisingly easy to make and required very few ingredients. I also opted for gluten free graham crackers.

Pulse graham crackers in a food processor with melted butter until it resembles wet sand. Place about a tablespoon of the crumbs into a mini muffin tin and bake at 350° for 15-20 mins until the  crust holds together. Once cooled place a tablespoon of the chocolate mousse into the cup and place a marshmallow on top. Next use my BF’s favorite kitchen tool, the mini blowtorch, to toast the marshmallows.

Guilt Free Chocolate Mousse

  • 1 ripe avocado
  • 1/4 cup unsweetened coco powder
  • 2 tablespoons date paste or 5 medjool dates

Blend all the ingredients in a blender and serve
